Pork, chickpea and sweet potato stew

Ingredients

› 1 tsp of vegetable oil
› 1 lean loin pork chop, cut into strips
› 1 small onion, peeled and chopped
› 1 clove of garlic, peeled and crushed or finely chopped
› ½ tsp of paprika
› ½ tsp of dried rosemary
› ½ tsp of dried thyme
› 1 bay leaf
› 1 tbsp of chickpeas, drained
› ½ of a medium-sized sweet potato, peeled and cubed
› 400 g tin of chopped tomatoes

Method

1. Heat the oil in a non-stick pan and when hot, brown the pork.
Remove the pork from the pan and set aside.
2. Next add the onion and all the herbs and spices and cook for 5 minutes
before stirring in the remainder of the ingredients, including the pork.
3. Cover the stew, turn the heat down to its lowest and simmer until
tender (1 hour).
